Food File: The Best Healthy, Dairy-Free, Protein Pancake Recipe

I love pancakes but if I’m honest with you, they’ve been filed under the category of “cheat meal” or “really-deserved-post-race-meal”, mainly because let’s face it, if you go out for brunch anywhere and order pancakes, you are probably going get something made with buttermilk, regular flour, sugar, and so on. Not that there’s anything wrong with the once in a while mouth-watering pancakes here and there (some of my faves are made here and here), but if you want to satisfy that craving AND feel good about it, as in feeling good for delivering nutrients to your body, you NEED to try these.

If you’re looking for a pancake recipe that is both healthy and delicious, then let me introduce you to my latest experiment: wholewheat, dairy-free, and protein packed pancakes. These are not only healthy, but good, really really good. There are lots of protein pancake recipes out there that don’t use flour (oats and bananas instead), but this recipe is as close as I get to the real thing. I do enjoy the super healthy kind with no flour, but I know that’s not for everyone, so give these a try! I’m positive you’ll LOVE them!

They are fluffy, delicious, easy to make, and with a side of berries and some real maple syrup, you’ll feel like brunch came to your place 😉 This recipe makes about 8-10 pancakes and if you have any leftovers just freeze them up in a ziploc and take out and warm up when needed.

. 1 cup wholewheat flour.
. 1/3 cup unsweetened almond milk (I use this one).
. 1 scoop vanilla flavoured protein powder (I use this one).
. 1/2 cup Lactose-free Greek Yogurt.
. 1 tbsp. baking powder.
. 1 tsp. baking soda.
. 1 egg
. A dash of cinnamon.

1. Beat the egg and almond milk with a whisk.
2. Add flour, baking soda, baking powder, protein powder, and cinnamon (you can definitely combine these together ahead, but I never trouble myself with that, what can I say?)
3. Mix with a wooden spoon.
4. Add yogurt and combine.
5. Heat a greased (with either butter or coconut oil) frying pan on medium heat, and let a scoop of batter down. Flip over when it browns. I’m sure you all know how to make pancakes right? 😉
6. Serve warm with berries, syrup or anything you fancy!
